Beef short ribs get called “dino ribs” for a reason — a full plate racked bone-up looks like something off a Jurassic Park prop table, and at 3-4 lbs per bone they cook nothing like a rack of pork spares. Trim the fat cap, but leave a real layer

Strip the thin membrane off the bone side and trim any silverskin, but don’t shave the top fat cap down to nothing. A quarter-inch of fat renders slowly over the 8+ hour cook and self-bastes the meat; strip it bare and the surface dries out before the interior finishes rendering.

250°F, and budget more time than brisket per pound

Run the smoker at 250-275°F and expect roughly 1.5 hours per pound of bone-in weight — a full plate can take 8 to 12 hours depending on thickness. Probe for doneness instead of watching the clock: the meat is ready when a thermometer slides into the thickest part with almost no resistance, usually somewhere around 203-206°F internal.

Wrap or don’t — both work, they just trade different things

Wrapping in butcher paper around the 165°F internal mark speeds the cook through the stall and keeps more moisture in, at a small cost to bark texture. Running unwrapped the whole way gives a harder, more developed bark but takes longer and risks drying out a thinner rack. Rest at least 45 minutes before cutting
