How to Spatchcock and Grill a Whole Chicken 2026: Faster, More Even Cook

A whole chicken cooked upright takes 75-90 minutes and still finishes with the breast overdone by the time the thighs catch up, because the two cuts need different internal temperatures and a standing bird cooks them at the same rate. Spatchcocking — cutting out the backbone and pressing the bird flat — fixes that mismatch and cuts total cook time by roughly a third.

Cutting out the backbone takes about two minutes

Flip the chicken breast-down, and use kitchen shears to cut along both sides of the backbone from tail to neck, then remove it entirely. Flip the bird over and press down firmly on the breastbone until you hear it crack and the whole thing lies flat — that crack is normal, not a mistake.

Flat means even heat exposure, which is the entire point

Once flattened, the thighs and legs — which need to hit a higher internal temperature than the breast to render properly — sit at the same distance from the heat source as the breast instead of shielded behind it. That’s what closes the temperature gap between the two cuts.

Set up two-zone heat and start skin-side up

Build a two-zone fire (charcoal banked to one side, or one burner off on a gas grill) and start the chicken on the cooler indirect side, skin-side up, so the fat renders slowly instead of flaring up immediately. Pull by temperature, not time — and pull the breast and thigh separately in your head

Breast meat is done at 165°F; thigh meat wants to go higher, to 175-180°F, before the connective tissue has actually broken down enough to eat well. On a spatchcocked bird both targets land close together time-wise, but check both spots rather than assuming one probe reading covers the whole chicken.

A weight on top speeds things up further, if you have one

Pressing the flattened bird down with a cast iron skillet or dedicated poultry weight increases skin-to-grate contact and produces noticeably crispier skin in less time — a real difference, not a marginal one, especially on a kettle or kamado where the grate doesn’t offer much surface pressure on its own.
