Smash burgers get their signature crust from one thing: hard, direct contact between cold ground beef and a screaming-hot flat surface, held there for exactly long enough to build a deep crust and no longer. Do it on a regular grill grate and you lose most of the effect, since the raised bars only touch a fraction of the patty. A griddle is what actually makes this technique work.

Get the griddle hotter than feels reasonable

Preheat to 400-450°F — noticeably hotter than most people run a griddle for pancakes or eggs. A drop of water should skitter and evaporate in under two seconds. If the surface isn’t hot enough, the smash step just squishes the patty instead of searing it, and you lose the crust that’s the entire point of the technique.

Use loosely packed balls, not pre-formed patties

Portion the beef into loose 2-3 oz balls — don’t compress them into a patty shape first. A tightly packed patty smashes unevenly and can end up dense in the middle; a loose ball spreads out thin and even when it hits the flattop.

Salt after smashing, not before

Salting ground beef ahead of time draws out moisture and can make the texture springy rather than tender. Salt the patty immediately after it hits the griddle, right on the exposed top surface — that’s the only step where timing genuinely changes the final texture.

Cheese goes on almost immediately, and use a lid or dome to melt it fast
