Tri-tip is a strange cut to shop for outside California and the Pacific Northwest — some butchers sell it labeled, some grind it into stew meat by default — but it’s worth tracking down. It cooks in under two hours, costs less per pound than brisket, and gets a genuine bark and smoke ring despite being a fast cook rather than an all-day one.

Ask for it by name, or by its other names

Tri-tip is a triangular cut from the bottom sirloin, sometimes labeled “triangle roast” or “Newport steak” depending on the region. If your grocery store doesn’t carry it, a real butcher counter almost always can order or cut one — it’s not a rare cut, just an unevenly stocked one outside its home region.

Trim the fat cap to about a quarter inch

Tri-tip carries a thicker fat cap on one side than most steaks. Trim it down to roughly a quarter inch — enough to render and add flavor, not so much that it blocks smoke penetration or leaves an unrendered slab on the plate.

250°F until 130-135°F internal, then rest

Smoke at 250°F to an internal temperature of 130-135°F for medium-rare, which usually takes 45 minutes to just over an hour depending on thickness — noticeably faster than most smoked cuts. Rest for 10-15 minutes under loose foil before cutting; skipping the rest on a fast cook like this loses a visible amount of juice.

A hard sear at the end matters more here than on a brisket

Because tri-tip is a steak-like cut rather than a long-braise cut, finishing with a hard sear over direct heat for 60-90 seconds per side after the smoke adds a crust that a slow cook alone won’t build. Pull it from indirect heat a few degrees under target and finish it hot.

Slice against the grain, and the grain changes direction mid-roast

This is the part that trips people up the first time: tri-tip’s muscle fibers run in two different directions across the roast, meeting roughly in the middle. Cut the roast in half at that point first, then slice each half against its own grain — slicing straight through the whole thing ignores the direction change and produces noticeably tougher bites.
