The process is simple once you’ve done it, but skipping steps is exactly how a brand-new griddle ends up looking three years old after one season.

Seasoning a New Griddle

Every new steel griddle ships with a manufacturer coating that needs to be removed before the first cook, then replaced with your own seasoning layers. The process:

1. Wash the surface with hot, soapy water and a scrub pad to strip the factory coating. This is the one time soap belongs anywhere near your griddle. 2. Dry it completely and heat it until it’s hot enough that a drop of water sizzles and evaporates immediately. 3. Apply a thin layer of high smoke-point oil – flaxseed oil or a dedicated griddle seasoning oil work well – spread thin with a paper towel or griddle cloth . Dealing With Rust or a Damaged Seasoning Layer

If a griddle sits unused and develops rust spots, they’re almost always recoverable without buying a new griddle. Scrub the rusted area back to bare metal with a griddle stone or heavy-duty scrub pad, then re-run the full seasoning process above on the affected area. A griddle that looks ruined after a winter in storage is usually a 20-minute fix, not a replacement purchase.
